Instructions:

1. Prepare the Chicken:
- Lightly coat a skillet with a short spray of cooking spray oil.
- Heat the skillet over medium heat.
- Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink inside.
- Once cooked, remove the chicken from the skillet and set it aside to cool slightly.
2. Mix the Dressing:
- In a small bowl, whisk together the olive oil, lime juice, garlic powder, salt, and black pepper until well combined.
3. Chop and Combine Salad Ingredients:
- While the chicken is cooling, peel, pit, and dice the avocado. Place the diced avocado in a large salad bowl.
- Core and dice the apple, and add the apple pieces to the bowl.
- Chop the celery and finely chop the onion and fresh parsley. Add both to the salad bowl with the avocado and apple.
4. Assemble the Salad:
- Once the chicken has cooled enough to handle, dice it into bite-sized pieces.
- Add the diced chicken to the salad bowl with the other ingredients.
5. Toss and Serve:
- Pour the prepared dressing over the salad ingredients in the bowl.
- Gently toss everything together until the ingredients are evenly coated with the dressing.
- Garnish with additional fresh parsley if desired.
