Ingredients:

3 tbsp chives
9g
4 eggs
200g
2 cup dried parsley
11g
3 cans canned tomatoes
330g
1/2 cup mayonnaise salad dressing
120g
16 oz bacon
450g
12 slices whole-wheat bread
340g

Instructions:

1. Cook Eggs:
- Fill a pot with water and bring it to a boil. Carefully add the eggs and cook for 9-12 minutes for hard-boiled eggs.
- Remove eggs from pot and place them in a bowl of ice water to cool. Once cooled, peel the eggs and cut them into slices.
2. Prepare Tomatoes:
- Drain the canned tomatoes thoroughly. Place the tomatoes in a bowl and mix with the finely chopped chives and dried parsley.
3. Toast Bread:
- While the bacon is cooking, toast the whole-wheat bread slices until they are golden brown.
4. Assemble Sandwiches:
- Lay out 4 slices of toasted bread on a flat surface. Spread a generous layer of mayonnaise on each slice.
- Add a layer of the tomato mixture on top of the mayonnaise.
- Place slices of hard-boiled eggs on top of the tomatoes.
- Add a layer of crispy bacon strips over the eggs.
- Spread a thin layer of mayonnaise on another 4 slices of toasted bread and place them on top of the bacon, mayonnaise side down.
- Repeat layering with the tomato mixture, egg slices, and bacon.
- Spread a thin layer of mayonnaise on the final 4 slices of toasted bread and place them on top to complete the sandwiches, mayonnaise side down.
5. Serve:
- Use a sharp knife to cut each sandwich diagonally into quarters or halves, securing each section with a toothpick if needed.
- Serve the sandwiches immediately while the ingredients are still fresh.

Tips:

- Use whole-wheat bread for added fiber and nutrients.

- Make sure to thoroughly drain the canned tomatoes to prevent the sandwich from becoming soggy.

- Feel free to toast the bread for extra crunch and flavor.

- Prepare all the ingredients in advance to make assembly quick and easy.

- Use a generous amount of mayo to add creaminess and bind the ingredients together.

- For extra flavor, consider adding a slice of cheese or avocado.

- Chop the chives and parsley finely to ensure even distribution of the fresh herbs.

- Cook the bacon until it's nice and crispy for the best texture contrast.

These bacon, egg, and tomato club sandwiches with chives and parsley are not only simple to prepare but are also packed with flavor. Whether you are having a casual family meal or entertaining guests, these sandwiches are sure to impress. Serve them with a side of fresh salad or some crispy fries for a complete and satisfying meal.
