- In the same skillet used for the bacon, cook the chicken breasts over medium heat until fully cooked (internal temperature of 165°F/75°C), about 6-8 minutes per side.

4. Prepare the Vinaigrette:
- In a small bowl, combine the finely chopped shallot, vinegar, mustard, olive oil, 1/4 tsp salt, and 1/4 tsp white pepper.
