Instructions:

1. Prepare the Marinade:
- Cut the red hot chili peppers and garlic cloves into smaller pieces for easier blending.
- Add the chopped chili peppers, garlic, ground cumin, cardamom, and olive oil into a blender or food processor.
- Blend until you get a smooth marinade paste.
2. Marinate the Chicken:
- Trim any excess fat from the chicken thighs and cut them into bite-sized pieces.
- Place the chicken pieces in a large mixing bowl.
- Pour the marinade over the chicken, making sure to coat each piece thoroughly.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes to 2 hours for better flavor absorption.
3. Prepare the Vegetables:
- Wash and cut the zucchini into thick rounds.
- Core and cut the red peppers into large chunks.
- Peel and cut the onion into quarters, then separate the layers into individual pieces.
4. Assemble the Skewers:
- Thread the chicken pieces onto the skewers, alternating with the pieces of zucchini, red pepper, and onion.
- Continue this pattern until all the ingredients are used up.
5. Cook the Skewers:
- Preheat your grill or grill pan to medium-high heat.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally to ensure even cooking and that the chicken is cooked through.
6. Serve:
- Once the chicken is fully cooked and the vegetables are tender, remove the skewers from the grill.
