Ingredients:

1 tbsp sugar
1 lime
1 tbsp spearmint
2 tbsp lime juice
1/3 cup rum
1 cup lemonade

Instructions:

1. Prepare the Lime:
- Begin by thoroughly rinsing the lime under cold water.
- Zest the lime using a fine grater, and then juice it. Set the zest aside for later use.
- Slice the remaining zested lime into thin rounds or small wedges.
2. Muddle the Mint:
- In a bowl or a large mixing cup, add 1 tbsp of spearmint leaves.
- Using a muddler or the back of a spoon, gently press down on the mint leaves to release their oils without tearing them apart.
3. Combine Ingredients:
- Add the freshly squeezed lime juice, lime zest, and sugar into the bowl with the muddled mint.
- Stir the mixture until the sugar is fully dissolved.
4. Mix in Liquids:
- Pour in 1/3 cup of rum and 1 cup of lemonade into the sugar-mint-lime mixture.
- Stir thoroughly to combine all the ingredients.
5. Prepare for Freezing:
- Place a few slices or wedges of lime into each popsicle mold for added flavor and aesthetic appeal.
- Carefully pour the mojito mixture into the popsicle molds, leaving a small space at the top to allow the mixture to expand as it freezes.
6. Freeze the Pops:
- Insert the popsicle sticks into the molds.
- Freeze the popsicles for at least 4-6 hours, or until completely solid.
