Instructions:

2. Cook the Pumpkin and Potato:
- Place the cubed pumpkin and potato into a large pot. Fill the pot with enough water to cover the vegetables.
- Bring the water to a boil over high heat. Once boiling, reduce the heat to medium and let it simmer for 15-20 minutes, or until the vegetables are tender when pierced with a fork.
3. Prepare the Sage and Garlic:
- While the vegetables are cooking, melt the butter in a small skillet over medium heat.
- Add the minced garlic and chopped sage leaves to the skillet. Sauté for 2-3 minutes, or until the garlic is fragrant and the sage is slightly crispy. Remove from heat and set aside.
4. Mash the Vegetables:
- Drain the cooked pumpkin and potato thoroughly and return them to the pot.
- Add the sautéed garlic and sage mixture, sour cream, and a pinch of salt and pepper to the pot.
- Use a potato masher or an immersion blender to mash everything together until you achieve a smooth and creamy consistency. Adjust seasoning to taste.
