Instructions:

1. Prepare the Sweet Potatoes:
- Peel and dice the sweet potatoes into small cubes. Spread them in a single layer on a baking sheet. Make sure there is space between the pieces to ensure even roasting. Place the baking sheet in the preheated oven. Roast the sweet potatoes for about 25-30 minutes

2. Cook the Kale and Onion:
- While the sweet potatoes are roasting, heat a small amount of oil in a skillet over medium heat.
- Add the finely chopped onion and sauté until it becomes translucent.
- Add the finely chopped kale to the skillet and cook until wilted, about 2-3 minutes.
- Remove from heat and set aside.
3. Mash the Sweet Potatoes:
- Transfer the roasted sweet potatoes to a large mixing bowl.
- Mash them with a fork or potato masher until smooth.
4. Combine Ingredients:
- Add the sautéed kale and onions to the mashed sweet potatoes.

- Add the garlic powder, fresh parsley, dried oregano, salt, and black pepper.
