Instructions:

1. Prepare the Vegetables:
- Finely chop the mushrooms.
- Grate the zucchini and place it in a clean kitchen towel. Squeeze out any excess moisture.
- Grate the carrot.
- Finely chop the shallots.
2. Mix the Ingredients:
- In a large mixing bowl, combine the ground pork, chopped mushrooms, grated zucchini, grated carrot, chopped shallots, bread crumbs, grated cheddar cheese, egg, and tomato sauce.
- Use your hands or a spoon to mix everything together until well combined.
3. Shape the Rissoles:
- Take a portion of the mixture and shape it into a patty about the size of your palm, flattening it slightly. Repeat with the rest of the mixture. You should get around 10-12 rissoles, depending on the size.
4. Cook the Rissoles:
- Heat a large non-stick frying pan over medium heat. You can use a small amount of oil if necessary to prevent sticking.
- Place the rissoles in the pan, ensuring they are not overcrowded. You may need to cook them in batches.
- Cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. Make sure the internal temperature reaches 160°F (71°C).
