- Peel and roughly chop the cucumbers.
- Peel and coarsely chop the onions.
2. Blend Ingredients:
- In a blender or food processor, add the garlic clove, chopped green pepper, cucumbers, onions, and fresh basil.
- Blend on high speed until smooth. Depending on the size of your blender, you might need to do this in batches.
3. Add Olive Oil and Seasoning:
- With the blender running on low, drizzle in the olive oil slowly until it fully incorporates and the mixture becomes creamy.
- Add a dash of salt and black pepper to taste. Blend briefly to mix.
4. Chill the Gazpacho:
- Transfer the blended mixture into a large bowl or pitcher.
- Cover and refrigerate for at least 1-2 hours to allow the flavors to meld and the gazpacho to chill thoroughly.
5. Serve the Gazpacho:
- Before serving, give the gazpacho a good stir.
- Pour into chilled bowls or glasses.
- Garnish with an extra basil leaf or a drizzle of olive oil if desired.

Tips:

- For a smoother texture, blend the gazpacho for a little longer and strain it through a fine mesh sieve.

- Chill the gazpacho for at least an hour before serving to let the flavors meld and enhance the cool, refreshing taste.

- Adjust the seasoning to your liking; you can add more salt, pepper, or even a splash of lemon juice for extra zest.

- Garnish with additional basil leaves, a drizzle of olive oil, or a few cucumber slices to elevate the presentation.
