Broad bean, mint and feta dip

Dive into the refreshing flavors of this Broad Bean, Mint, and Feta Dip. Perfect for a spring or summer gathering, this dip combines the earthy taste of broad beans with the brightness of mint and the salty creaminess of feta. Serve it with fresh vegetables, warm bread, or crispy crackers for a delightful appetizer or snack.

Ingredients:

3 cups broad beans
450g
1/2 cup feta cheese
120g
2 garlic cloves
6g
1 tbsp lemon juice
5g
2 tbsp parsley
30g

Instructions:

1. Prepare the Broad Beans:
- Bring a pot of water to a boil and add the broad beans.
- Cook for about 5-7 minutes or until they are tender.
- Drain the broad beans and allow them to cool slightly.
- Once cooled, peel off the outer skins to reveal the bright green beans inside.
2. Prepare the Garlic:
- Peel and roughly chop the garlic cloves.
3. Blend the Ingredients:
- In a food processor or blender, combine the cooked and peeled broad beans, chopped garlic, feta cheese, lemon juice, and spearmint leaves.
- Blend until the mixture is smooth and creamy. You may need to stop occasionally to scrape down the sides of the bowl to ensure everything is well combined.
4. Adjust Seasoning:
- Taste the dip and season with additional lemon juice or salt if needed. Remember that feta cheese is already quite salty, so be cautious when adding additional salt.
5. Serve:
- Transfer the dip to a serving bowl.
- Garnish with a few whole or roughly chopped spearmint leaves if desired.
6. Enjoy:
- Serve this delicious broad bean, mint, and feta dip with pita bread, crackers, or vegetable sticks as a delightful appetizer or snack.

Tips:

- For an extra smooth texture, use peeled broad beans. You can blanch the beans in boiling water for a few minutes and then plunge them into ice water to help remove the skins easily.

- Adjust the garlic to your taste preference. You can start with one clove and add more if you prefer a stronger garlic flavor.

- If you like a bit of zest, add some lemon zest along with the lemon juice to enhance the citrusy flavor.

- For a different texture, you can leave some of the beans whole when mixing to add a bit of chunkiness to the dip.

- Serve the dip chilled for the best flavor. Letting it sit in the refrigerator for an hour allows the flavors to meld together perfectly.

This Broad Bean, Mint, and Feta Dip is a flavorful and refreshing dish that is sure to be a hit at your next gathering. The combination of fresh herbs and creamy cheese with the wholesome goodness of broad beans creates a dip that's not only delicious but also nutritious. Enjoy it as a part of your appetizer spread and watch it disappear in no time!
