2. Heat the Olive Oil:
- In a large skillet or frying pan, heat 1 tablespoon of olive oil over medium-high heat. Make sure the oil is hot but not smoking, as you’ll be searing the chicken.
3. Cook the Chicken:
- Season the chicken breasts with salt and pepper to your liking. Place the chicken breasts in the hot skillet. Cook them for 6-7 minutes on each side, or until they are golden brown and cooked through with an internal temperature of 165°F (75°C). Remove the chicken from the skillet and let it rest for a few minutes.
4. Shred or Slice the Chicken:
- Once the chicken has rested, use two forks to shred it into bite-sized pieces, or slice it thinly, depending on your preference.
5. Warm the Tortillas:
- While the chicken cools, take the tortillas and warm them up. You can do this by heating another clean skillet over medium heat and warming each tortilla for about 20-30 seconds on each side until they are soft and pliable. Alternatively, you can microwave them for about 30-45 seconds wrapped in a damp paper towel.
6. Assemble the Wraps:
- Lay out each tortilla flat on a clean surface. Place an even amount of shredded or sliced chicken onto the center of each tortilla. Add a handful of fresh spinach leaves on top of the chicken.
7. Wrap and Serve:
- Fold in the sides of the tortilla and then roll it up tightly from the bottom to form a secure wrap. Slice each wrap in half if desired, and serve immediately.
