Ingredients:

1 cup apple juice

Instructions:

1. Prepare the Liquid Base:
- In a medium-sized saucepan, pour in 1 cup of apple juice.
- Add 1 tablespoon of sugar into the apple juice.
- Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally to help dissolve the sugar.
2. Add the Couscous:
- Once the apple juice mixture reaches a boil, remove the saucepan from the heat.
- Quickly add 1 cup of couscous to the saucepan.
- Stir in 1 teaspoon of your preferred spice mix (cinnamon, nutmeg, cardamom, etc.).
- Cover the saucepan with a lid and let it sit for about 5-10 minutes, or until the couscous has absorbed all the liquid.
3. Prepare the Nuts and Dried Fruit:
- While the couscous is absorbing the liquid, roughly chop 1/3 cup of almonds.
- Roughly chop 1/3 cup of dried apricots.
- Shell and roughly chop 1/3 cup of pistachio nuts.
4. Combine Ingredients:
- Once the couscous has fully absorbed the liquid, fluff it with a fork to break up any clumps.
- Gently fold in the chopped almonds, dried apricots, and pistachio nuts.
5. Serve:
- Serve the Fruit and Nut Breakfast Couscous warm or at room temperature.
- You can also add a drizzle of honey or a dollop of yogurt on top for extra flavor.
