Lemon blueberry oatmeal bars are a delightful treat that combine the tanginess of lemon, the sweetness of blueberries, and the wholesome goodness of oatmeal. These bars are perfect for a quick snack, breakfast on-the-go, or a delightful dessert. By using honey and brown sugar, we add a natural sweetness that enhances the flavor without being overly sugary.

Ingredients:

6 tbsp butter
81g
1.50 cups all-purpose white wheat flour
190g
1.50 cups multi-grain oatmeal
120g
1/2 cup honey
170g
1/4 cup brown sugar
54g
1 tsp lemon zest
2g
1 dash salt
0.40g
2 cups blueberries
300g
1/4 cup brown sugar
54g
2 tbsp lemon juice
30g
1 tsp all-purpose white wheat flour
2.60g

Instructions:

1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper for easier removal.
2. Prepare the Crust and Topping:
- In a medium saucepan, melt the 6 tablespoons of butter over medium heat.
- Once melted, remove the saucepan from heat and stir in 1/2 cup honey (170g) and 1/4 cup brown sugar (54g) until fully combined.
- Add 1.5 cups of all-purpose white wheat flour (190g), 1.5 cups multi-grain oatmeal (120g), 1 tsp lemon zest (2g), and a dash of salt (0.40g) to the butter mixture. Stir until everything is thoroughly mixed and crumbly.
3. Form the Base Layer:
- Press about two-thirds of the oatmeal mixture into the bottom of the prepared baking pan to form an even layer. Set aside the remaining mixture for the topping.
4. Prepare the Blueberry Filling:
- In a mixing bowl, combine 2 cups of blueberries (300g), 1/4 cup brown sugar (54g), 2 tablespoons of lemon juice (30g), and 1 tsp all-purpose white wheat flour (2.60g). Toss until the blueberries are evenly coated.
5. Assemble the Bars:
- Spread the blueberry filling evenly over the crust in the baking pan.
- Sprinkle the remaining oatmeal mixture evenly over the blueberry filling, pressing down gently.
6. Bake:
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the blueberries are bubbly.
7. Cool and Serve:
- Allow the bars to cool completely in the pan before cutting into squares. This will help them set and be easier to cut.
8. Enjoy:
- Serve the lemon blueberry oatmeal bars as a delicious snack or dessert. Enjoy!

Tips:

- Make sure the butter is at room temperature before you begin; this will make it easier to mix with the flour and oatmeal mixture.

- Use fresh blueberries for the best flavor and texture, but if you only have frozen blueberries, be sure to thaw and drain them well before using.

- Zest the lemon before juicing it to get the best results and to avoid any waste.

- Press the oatmeal mixture firmly in the baking dish to create a solid base and topping that holds together well.

Lemon blueberry oatmeal bars are simple to prepare and offer a nutritious, delicious option for any time of the day. By following these tips and steps, you'll achieve a perfect balance of flavors and textures that will leave everyone craving for more. Enjoy these bars fresh out of the oven or even chilled; they are sure to be a hit!
