Ingredients:

4 leafs lettuce
110g
1 red pepper
160g
2 carrots
140g
2 cucumbers
400g
12 oz tofu
340g
1 tsp coriander leaves
1g
1/2 cup peanut butter
130g
2 tbsp sesame oil
27g
1.50 tbsp soy sauce
27g
1 tsp sugar
4.20g
2 garlic cloves
6g
1 lime
70g
1/4 tsp red pepper (spice)
0.08g
1 tsp coconut oil
4.50g

Instructions:

1. Prepare the Vegetables:
- Rinse and dry the lettuce leaves.
- Thinly slice the red bell pepper.
- Peel and julienne the carrots.
- Peel and julienne the cucumbers.
2. Prepare the Peanut Sauce:
- In a medium bowl, combine the peanut butter, sesame oil, soy sauce, sugar, minced garlic, lime juice, and red pepper flakes.
- Mix well until smooth and well combined.
3. Cook the Tofu:
- Heat the coconut oil in a non-stick skillet over medium heat.
- Add the cubed tofu and cook, stirring occasionally, until the tofu is golden and slightly crispy on all sides, about 8-10 minutes.
- Remove from heat and set aside.
4. Assemble the Lettuce Wraps:
- Lay out the lettuce leaves on a flat surface.
- Divide the cooked tofu evenly among the lettuce leaves.
- Add a portion of the red bell pepper, carrots, and cucumbers to each wrap.
- Drizzle each wrap with the prepared peanut sauce.
- Sprinkle with fresh coriander leaves.
5. Serve:
- Fold the lettuce wraps gently to encase the fillings and secure them.
- Serve immediately.

Tips:

- Ensure the tofu is well-drained and pressed to remove excess moisture. This helps it absorb flavors better and achieve a firmer texture when cooked.

- Use a sharp knife to thinly slice the vegetables for a consistent texture and presentation.

- Toast the sesame oil lightly to enhance its nutty flavor before mixing it with the other ingredients.

- Adjust the quantity of red pepper flakes based on your spice tolerance. A little goes a long way, so start small and add more as needed.

- For extra crunch and flavor, consider adding a sprinkle of chopped peanuts or sesame seeds to the wraps before serving.

These peanut tofu lettuce wraps with veggies are not only a treat for your palate but also a feast for your eyes. The combination of colorful vegetables, protein-packed tofu, and delightful peanut sauce creates a well-rounded meal that's both healthy and satisfying. Whether you're serving them as an appetizer or a main course, they are sure to impress. Enjoy the fresh, vibrant flavors and the simplicity of this delicious recipe!
