Apricot, sesame and cranberry biscuits

Indulge in the delightful blend of flavors with these Apricot, Sesame, and Cranberry Biscuits. Perfect for satisfying your sweet tooth while enjoying the healthy benefits of dried fruits, oats, and sesame seeds, these biscuits are easy to make and ideal for any occasion.

Ingredients:

1/2 cup butter
110g
1/2 cup brown sugar
120g
2 tbsp maple syrup
30g
1 tbsp water
16g
1 tsp baking soda
5g
1 cup oats
90g
1 cup all-purpose white wheat flour
120g
1/3 cup sesame seeds
50g
1/2 cup dried apricots
72g
1/2 cup dried cranberries
72g

Instructions:

1. Preheat Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. Prepare Wet Ingredients:
In a medium-sized saucepan, melt the butter over low heat. Once melted, add the brown sugar and maple syrup. Stir continuously until the sugar has completely dissolved and the mixture is smooth.
3. Add Baking Soda:
Remove the saucepan from the heat. Add the water to the butter mixture, then sprinkle in the baking soda. Stir well. The mixture may foam up slightly, this is normal.
4. Combine Dry Ingredients:
In a large mixing bowl, combine the oats, all-purpose flour, and sesame seeds. Mix well to evenly distribute the ingredients.
5. Mix Wet and Dry Ingredients:
Pour the butter mixture into the bowl with the dry ingredients. Stir until the mixture is well combined and forms a dough.
6. Add Dried Fruits:
Fold in the finely chopped dried apricots and chopped dried cranberries until evenly distributed throughout the dough.
7. Form Biscuits:
Scoop out tablespoon-sized portions of the dough and shape them into balls. Place these on the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
8. Flatten Biscuits:
Gently press each ball down with your fingers or the back of a spoon to flatten slightly.
9. Bake:
Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown around the edges.
10. Cool:
Remove the biscuits from the oven and allow them to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
11. Serve and Store:
Enjoy your Apricot, Sesame, and Cranberry Biscuits once they have cooled. Store any leftovers in an airtight container at room temperature for up to a week.

Tips:

- Ensure your butter is at room temperature for easier mixing.

- Chop the dried apricots and cranberries into small, even pieces so they're evenly distributed throughout the biscuits.

- For a slight variation, you can substitute the sesame seeds with other seeds like flaxseed or chia seeds.

- Be careful not to overmix the dough to keep the biscuits tender.

- Cool the biscuits completely on a wire rack to avoid soggy bottoms.

Enjoy your flavorful apricot, sesame, and cranberry biscuits with a cup of tea, or serve them as a tasty snack for family and friends. Their delightful mix of textures and flavors is sure to be a hit!
