This dish combines the hearty taste of ground beef with the natural sweetness of sweet potatoes, balanced by a medley of nutritious vegetables. It's perfect for a family dinner or a special occasion, offering both taste and nutrition in every bite.

Instructions:

1. Preheat Oven: Preheat your oven to 375°F (190°C).
2. Prepare Sweet Potatoes: Peel and dice the sweet potatoes. Place them in a pot of boiling water and cook until they are tender, about 15-20 minutes. Once cooked, drain and mash them until smooth. Set aside.
3. Chop Vegetables: While the sweet potatoes are cooking, finely chop the onion, carrot, and zucchini.
4. Cook Vegetables: In a large skillet, heat 2 tsp of olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
5. Add Carrot and Zucchini: Add the chopped carrot and zucchini to the skillet and cook for another 5-7 minutes until the vegetables are tender.
6. Cook Ground Beef: Add the ground beef to the skillet with the vegetables. Break it apart with a spatula and cook until it is browned and cooked through, about 7-10 minutes.
7. Add Tomatoes: Once the meat is cooked, add the canned tomatoes (including the juice). Stir to combine and let it simmer for about 10 minutes so the flavors can meld together. Season with salt and pepper to taste.
8. Assemble Pies: Spoon the meat and vegetable mixture into individual pie tins or a muffin tin for mini pies.
9. Add Sweet Potato Topping: Spread a layer of the mashed sweet potatoes over the top of the meat mixture in each pie tin.
10. Bake: Place the pies in the preheated oven and bake for about 25-30 minutes, or until the sweet potato topping is slightly golden and the filling is bubbly.
11. Serve: Remove from the oven and let them cool slightly before serving. Enjoy your delicious Little Pies with Sweet Potato Topping!

Tips:

- Ensure your sweet potatoes are fully cooked before mashing them to get a smooth and creamy topping.

- If you prefer a bit more flavor, consider adding herbs such as thyme or rosemary to the beef mixture.

- Use a food processor to finely chop the onion, carrot, and zucchini, saving prep time and ensuring consistent texture.

- For a healthier option, you can substitute ground beef with ground turkey or chicken.

With its rich, savory filling and subtly sweet topping, these little pies with sweet potato are sure to become a favorite in your recipe collection. They are a comforting and wholesome meal that pleases both the palate and the senses. Enjoy them warm, and don't forget to share the love with family and friends!
