Sausage and egg bites are a delicious, protein-packed snack that’s simple to prepare and perfect for breakfast, brunch, or any time you need a quick bite. Combining the savory flavor of Vienna sausage with the rich taste of eggs, these bites are both satisfying and versatile.

Ingredients:

12 oz vienna sausage

6 eggs

1/8 onion

Instructions:

1. Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin or line it with silicone muffin cups.
2. Prepare the Sausage:
- Drain and pat dry the Vienna sausages.
- Cut the sausages into small bite-sized pieces.
3. Chop the Onion:
- Finely chop 1/8 of a medium onion.
4. Whisk the Eggs:
- In a mixing bowl, crack open the 6 eggs.
- Whisk the eggs until the yolks and whites are fully combined.
5. Combine Ingredients:
- Add the chopped onion and sausage pieces to the whisked eggs.
- Stir well to ensure the sausage and onion are evenly distributed throughout the egg mixture.
6. Fill the Muffin Tin:
- Carefully pour the mixture into the prepared muffin tin or cups, filling each about 2/3 of the way full. Ensure there's some sausage and onion in each cup.
7. Bake:
- Place the muffin tin in the preheated oven.
- Bake for 15-20 minutes, or until the egg bites are fully set and lightly golden on top. You can check doneness by inserting a toothpick in the center; it should come out clean.
8. Cool and Serve:
- Remove the muffin tin from the oven and let the sausage and egg bites cool for a few minutes.
- Gently remove the bites from the tin.
9. Enjoy:
- Serve immediately while warm. These bites are great on their own or with a side of your favorite dipping sauce or sliced avocado.
