Sausage and egg bites

Sausage and egg bites are a delicious, protein-packed snack that’s simple to prepare and perfect for breakfast, brunch, or any time you need a quick bite. Combining the savory flavor of Vienna sausage with the rich taste of eggs, these bites are both satisfying and versatile.

Instructions:

1. Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin or line it with silicone muffin cups.
2. Prepare the Sausage:
- Drain and pat dry the Vienna sausages.
- Cut the sausages into small bite-sized pieces.
3. Chop the Onion:
- Finely chop 1/8 of a medium onion.
4. Whisk the Eggs:
- In a mixing bowl, crack open the 6 eggs.
- Whisk the eggs until the yolks and whites are fully combined.
5. Combine Ingredients:
- Add the chopped onion and sausage pieces to the whisked eggs.
- Stir well to ensure the sausage and onion are evenly distributed throughout the egg mixture.
6. Fill the Muffin Tin:
- Carefully pour the mixture into the prepared muffin tin or cups, filling each about 2/3 of the way full. Ensure there's some sausage and onion in each cup.
7. Bake:
- Place the muffin tin in the preheated oven.
- Bake for 15-20 minutes, or until the egg bites are fully set and lightly golden on top. You can check doneness by inserting a toothpick in the center; it should come out clean.
8. Cool and Serve:
- Remove the muffin tin from the oven and let the sausage and egg bites cool for a few minutes.
- Gently remove the bites from the tin.
9. Enjoy:
- Serve immediately while warm. These bites are great on their own or with a side of your favorite dipping sauce or sliced avocado.

Tips:

- Preheat your oven to 350°F (175°C) before starting the preparation.

- Chop the Vienna sausage and onion finely for even distribution in each bite.

- Lightly grease a muffin tin to prevent the bites from sticking.

- Whisk the eggs thoroughly for a fluffy texture.

- Distribute the sausage and onion mixture evenly across the muffin tin before pouring in the egg mixture.

- Bake for around 15-20 minutes, or until the egg bites are set and slightly golden on top.

- Let them cool slightly before removing them from the muffin tin to avoid breaking them.

- Add a bit of shredded cheese or chopped vegetables to the mixture for extra flavor.

- Store leftovers in an airtight container in the refrigerator for up to 4 days.

- Reheat in the microwave or oven for a quick, easy snack.

Sausage and egg bites are a versatile, hearty option that can be enjoyed warm or at room temperature. They’re perfect for meal prepping, easy breakfast options, or snacks on the go. Experiment with additional ingredients like cheese or veggies to make them your own.
