Instructions:

1. Prepare the Vegetables:
- Mince the garlic cloves.
- Dice the onions.
- Chop the green pepper.
- Slice the mushrooms.
2. Cook the Aromatics:
- In a large pot or Dutch oven, heat 2 tbsp of olive oil over medium heat.
- Add the minced garlic and diced onions. Sauté for about 3-4 minutes until the onions become translucent.
3. Add Vegetables:
- Stir in the chopped green pepper and sliced mushrooms. Cook for another 5 minutes until the vegetables are tender.
4. Cook the Ground Beef:
- Push the vegetables to the side of the pot. Add the ground beef to the center. Break it up with a wooden spoon and cook until browned, about 5-7 minutes.
5. Season the Mixture:
- Mix in 1 tsp red pepper, a dash of salt, 1 tsp dried oregano, 2 tbsp ground cumin, 2 tbsp chili powder, and chopped coriander leaves. Stir well to combine with the meat and vegetables.
6. Add Tomatoes and Beans:
- Pour in the 2 cans of canned tomatoes with their juice and 2 cans of black beans (drained and rinsed). Stir to combine all ingredients.
7. Simmer the Chili:
- Bring the mixture to a boil. Then reduce the heat to low and let it simmer for about 30-45 minutes, stirring occasionally. This allows the flavors to meld together.
8. Serve:
- Ladle the hot chili into bowls. Top each bowl with a sprinkle of shredded cheddar cheese and a dollop of Greek yogurt.

- For a deeper flavor, saute the garlic and onions until they are caramelized before adding the other vegetables and beef.
