- Heat 2 tbsp of the olive oil in a large pan over medium heat.

- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Stir in the dried oregano and continue to cook for another minute.
4. Deglaze the Pan:
- Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom.
- Let the mixture simmer until the wine has mostly evaporated, about 3-4 minutes.
5. Combine Ingredients:
- Heat the remaining 2 tbsp of olive oil in the pan.
- Add the drained cashews, cooked mushrooms, and parsley to the pan. Stir to combine.
- Add the butter and vegetable broth, allowing the butter to melt and the mixture to come to a simmer.
6. Add the Macaroni:
- Stir the cooked macaroni into the mushroom mixture.
- Season with a dash of salt and black pepper.
- Continue to cook for 2-3 minutes, allowing the flavors to meld together.
7. Serve:
- Transfer the toasted mushroom macaroni with cashews to a serving platter.
- Garnish with the remaining parsley.
