Instructions:

1. Prepare the Ingredients:

- Slice the shiitake mushrooms into thin pieces.
- Finely chop the onion, mince the garlic, and grate the Parmesan cheese.

2. Heat the Oil:
- In a large skillet or saucepan, heat 1 tablespoon of olive oil over medium heat.
3. Cook the Aromatics:
- Add the chopped onion to the skillet and sauté until it is soft and translucent, about 5-7 minutes.
- Add the minced garlic and cook for another 1-2 minutes, until fragrant.
4. Cook the Mushrooms:
- Add the sliced shiitake mushrooms to the pan, cooking until they are soft and browned, about 5 minutes.
- Add the assorted mushrooms and continue to cook for another 3-4 minutes until all the mushrooms are tender.

6. Deglaze with Wine:
- Pour in 1 cup of white wine, stirring constantly until the wine has mostly evaporated and been absorbed by the quinoa.
7. Add the Broth:
- Gradually add the vegetable broth, about 1/2 cup at a time, stirring frequently.
- Allow the liquid to be absorbed before adding more.
- Continue this process until the quinoa is cooked through and has a creamy consistency. This should take about 20-25 minutes.
8. Finish the Risotto:
- Once the quinoa is cooked and the mixture has a risotto-like consistency, stir in the grated Parmesan cheese.
- Add the fresh thyme leaves, and season with salt and pepper to taste.
