- Add the sautéed garlic and burnt butter, 3/4 cup milk, and the 2 tsp lemon juice.
- Mash the potatoes until smooth and creamy.
5. Combine with Scallions and Arugula:
- Fold in the chopped scallions and arugula until evenly distributed.
- Keep the colcannon warm on low heat, stirring occasionally.

- Heat a large skillet over medium-high heat.
- Cook the salmon fillets, skin-side down first, for about 4-5 minutes.
- Flip the fillets and cook for an additional 4-5 minutes or until the salmon is cooked through and flakes easily with a fork.
