2 slices whole-wheat bread

Instructions:

1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Breadcrumbs:
- Tear the whole-wheat bread slices into pieces and place them in a food processor.
- Add the pine nuts and pulse until you get coarse breadcrumbs.
- Transfer the mixture to a bowl.
3. Season the Breadcrumbs:
- Add the finely chopped spearmint to the breadcrumb mixture.
- Zest a lemon and add the zest to the mixture (optional for additional flavor).
- Season with a pinch of salt and pepper, then toss well to combine.

- While the salmon is baking, steam the green beans and carrots until they are tender but still crisp, about 5-7 minutes.
