Ingredients:

2 sweet potatos
400g
2/3 cup butter
150g
1 cup sugar
200g
2 tsp vanilla extract
8g
2 eggs
100g
2 cups self-raising flour
300g
1 tsp salt
5g
1/2 cup milk (1% fat)
120g
2 tbsp orange zest
30g
1 tbsp orange juice
16g
1 tbsp dry cocoa powder
16g
1 cup dark chocolate
230g
1/3 cup heavy whipping cream
72g

Instructions:

1. Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) loaf pan or line it with parchment paper.
- Peel and grate the sweet potatoes, then set them aside.
2. Making the Batter
- In a large mixing bowl, cream the softened butter and sugar together until the mixture is light and fluffy.
- Add the vanilla extract and the eggs, one at a time, beating well after each addition.
- Gradually add the grated sweet potatoes to the mixture and mix until well combined.
3. Combining Dry Ingredients
- In a separate bowl, sift together the self-raising flour and salt.
- Gradually add the dry ingredients to the sweet potato mixture, alternating with the milk, and mix until just combined.
4. Creating the Marble Effect
- Divide the batter into two equal portions.
- In one portion, mix in the orange zest and orange juice.
- In the other portion, mix in the cocoa powder.
5. Layering the Batter
- Spoon alternate dollops of the orange and chocolate batters into the prepared loaf pan.
- Use a knife or a skewer to gently swirl the batters together to create a marble effect.
6. Baking
- Bake in the preheated oven for about 55-65 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
7. Making the Chocolate Ganache
- While the cake is cooling, prepare the chocolate ganache topping.
- In a small saucepan, heat the heavy whipping cream over medium heat until it just begins to simmer (do not boil).
- Remove from heat and pour over the chopped dark chocolate in a heatproof bowl. Let it sit for about 5 minutes to melt the chocolate.
- Stir until smooth and glossy.
8. Finishing Touches
- Once the cake has cooled, pour the chocolate ganache over the top, letting it drizzle down the sides.
- Optional: Garnish with additional orange zest or chocolate shavings.
9. Serving
- Allow the ganache to set slightly before slicing. Serve and enjoy your choc-orange and sweet potato marble cake!

Tips:

- Ensure sweet potatoes are cooked and mashed smoothly to avoid lumps in the batter.

- For a more pronounced orange flavor, add a bit more orange zest to the batter.

- Carefully fold the chocolate and orange batters together to create the marble effect without over-mixing.

- When melting the dark chocolate, do so gently over a double boiler to avoid burning.

- Replace self-raising flour with a mix of all-purpose flour, baking powder, and salt if needed. For every cup of self-raising flour, use 1 cup all-purpose flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon salt.

- Allow the cake to cool completely before slicing to maintain its shape and texture.

Delighting in a slice of Choc-orange and Sweet Potato Marble Cake is more than just a culinary experience—it's a celebration of diverse flavors harmoniously combined.
