With a moist and flavorful cake base, layered with lush cream and silky melted chocolates, every bite is a symphony of chocolatey goodness.

Ingredients:

2 yolks
33g
2 tbsp sugar
30g
1/3 cup buttermilk
72g
1/4 cup butter
54g
1 cup all-purpose white wheat flour
120g
1 tsp baking powder
5g
1 tsp baking soda
5g
2 tbsp dark chocolate
30g
2 tbsp milk chocolate
30g
1/2 cup white chocolate
120g
3/4 cup heavy whipping cream
170g
3/4 cup milk (1% fat)
180g

Instructions:

1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour three 4-inch round cake pans or line them with parchment paper.
2. Melt the Chocolates:
- In a microwave-safe bowl or over a double boiler, melt the dark chocolate, milk chocolate, and white chocolate separately. Set them aside to cool slightly.
3. Prepare the Batter:
- In a medium bowl, whisk together the egg yolks and sugar until well combined and slightly pale.
- Add the buttermilk and melted butter, and whisk until smooth.
- In another bowl, sift together the all-purpose flour, baking powder, and baking soda.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
4. Divide the Batter and Add Chocolates:
- Divide the batter evenly into three separate bowls.
- Mix the melted dark chocolate into one portion of the batter, the milk chocolate into the second portion, and the white chocolate into the third portion.
5. Bake the Layers:
- Pour each batter into the prepared cake pans, ensuring even distribution.
- Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the cakes cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
6. Prepare the Whipped Cream:
- While the cakes are cooling, whip the heavy whipping cream in a chilled mixing bowl until stiff peaks form.
7. Assemble the Cakes:
- Once the cakes are completely cooled, trim the top if needed to make them flat and even.
- Place the dark chocolate cake layer on a serving plate and spread a generous layer of whipped cream on top.
- Add the milk chocolate cake layer on top of the whipped cream, followed by another generous layer of whipped cream.
- Lastly, place the white chocolate cake layer on top and finish with a layer of whipped cream.
8. Serve:
- Optionally, you can decorate the top with chocolate shavings or a drizzle of melted chocolate.
- Serve immediately while slightly warm for the best experience. If desired, you can warm individual slices in the microwave for 10-15 seconds before serving.

Tips:

- Ensure that your ingredients are at room temperature before you begin for smoother mixing and better texture.

- Be careful not to overmix the batter to avoid a dense and tough cake. Mix until ingredients are just combined.

- When melting the chocolates, do so over a double boiler or in short bursts in the microwave, stirring frequently, to prevent burning.

- Allow the cake layers to cool slightly before pouring the cream and melted chocolate mixture to prevent it from becoming too runny.

- Use a toothpick or skewer inserted into the center of the cakes to check for doneness. It should come out clean or with a few moist crumbs.

- For a more intense chocolate flavor, consider using high-quality chocolate brands.

- Serve the cakes warm for the best experience. Reheat briefly in the microwave if needed before serving.

After savoring these warm triple chocolate layer cakes, you'll understand what it means to be in chocolate ecstasy. The combination of the dark, milk, and white chocolates provides a harmonious blend of sweetness and richness. Whether you're celebrating a special occasion or simply treating yourself, this recipe will undoubtedly impress and delight.
