- Bring to a boil over high heat. Once boiling, reduce to a simmer, cover, and cook for about 15-20 minutes or until the water is absorbed and the quinoa is tender.
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and set aside.
2. Cook the Sweet Corn:
- Meanwhile, shuck the 4 sweet corn cobs and remove the kernels using a sharp knife.
- In a large skillet, melt 1/2 stick of butter over medium heat. Add the corn kernels and cook, stirring occasionally, for about 5-7 minutes until tender and slightly golden.
3. Combine Ingredients:
- Slice the scallions thinly.
- In a large mixing bowl, combine the cooked quinoa, sautéed corn, sliced scallions, 3 tsp lemon zest, and 2 tbsp lemon juice.
- Add the finely chopped spearmint, 1/4 tsp black pepper, and 1 tbsp honey. Mix well to combine all the flavors.
4. Adjust Seasoning:
- Taste and adjust the seasoning if needed. You may add more salt, pepper, or lemon juice according to your preference.
5. Serve:
