Lemon, orange & passionfruit flummery

Lemon, orange, and passionfruit flummery is a delightful, zesty dessert that's perfect for summer! This light and refreshing dish is reminiscent of a fruity mousse, combining the vibrant flavors of citrus and passionfruit to create a treat that's both sweet and tangy. Simple and straightforward, this recipe is an excellent choice for those looking to impress their guests with a homemade dessert that doesn't require extensive baking skills.

Ingredients:

1/2 cup sugar
100g
2 tbsp all-purpose white wheat flour
30g
1 tbsp gelatin powder
16g
1 cup water
250g
1 cup orange juice
200g
1 lemon
110g

Instructions:

1. Prepare the Lemon and Orange Juice:
- Zest the lemon and then juice it to obtain about 1/4 cup lemon juice. Set aside the zest and juice.
- Juice the oranges to get 1 cup of fresh orange juice unless using pre-squeezed juice.
2. Mix the Dry Ingredients:
- In a medium saucepan, combine the sugar, flour, and gelatin powder. Whisk these dry ingredients together until well-blended.
3. Add Liquid Ingredients:
- Gradually pour the water into the saucepan containing the dry ingredients, stirring constantly to avoid lumps.
- Add the orange juice and lemon juice into the mixture.
4. Cook the Mixture:
- Place the saucepan over medium heat. Continue to stir the mixture until it comes to a boil. This will ensure the gelatin and flour dissolve completely and the mixture thickens.
- Once it reaches a boil, reduce the heat to a simmer, and cook for an additional 2-3 minutes while whisking continuously. The mixture should become smooth and start to thicken.
5. Cool the Mixture:
- Remove the saucepan from the heat and stir in the lemon zest, and passionfruit pulp if using. Mix well to incorporate all the flavors.
- Pour the flummery mixture into serving bowls, cups, or a large serving dish.
6. Set the Flummery:
- Allow the flummery to cool to room temperature. Once cooled, cover with plastic wrap and refrigerate for at least 4 hours, or until fully set.
7. Serve:
- Once set, the flummery can be served as is, or garnished with additional passionfruit pulp, whipped cream, or fresh mint leaves for an added touch of freshness and visual appeal.

Tips:

- Make sure to dissolve the gelatin powder completely to avoid any grainy texture in your flummery.

- For a stronger citrus flavor, you can add the zest of the lemon and orange to the mixture.

- Chill the flummery in individual serving glasses or a large bowl, depending on your presentation preference.

- Double-check the sweetness before setting the mixture. If you prefer a sweeter dessert, you can add more sugar to taste.

- You can garnish the flummery with fresh passionfruit pulp or citrus slices for an extra burst of flavor and an attractive presentation.

With its vibrant flavors and light texture, lemon, orange, and passionfruit flummery is a delicious way to end any meal. Serve it chilled and topped with fresh fruit or whipped cream to elevate your dessert experience. This recipe proves that creating an impressive and tasty dessert doesn't have to be complicated!
