Instructions:

1. Cook the Rice:
- Prepare the brown rice according to the package instructions. Once cooked, set it aside and keep it warm.

- Cut the tofu into 1-inch cubes.
- Toss the tofu cubes with 1 tablespoon of olive oil and spread them out in a single layer on a baking sheet lined with parchment paper or a silicone baking mat.
- Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
