Instructions:

1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Cauliflower:
- Trim the leaves from the cauliflower and cut out the core to create a cavity for stuffing, ensuring to keep the head intact.
- Bring a large pot of salted water to a boil. Place the cauliflower in the boiling water and cook for about 5-7 minutes until slightly tender but still firm. Remove and let it drain upside down on a clean kitchen towel to remove excess water.
3. Prepare the Filling:
- Heat 1 tbsp of olive oil in a large skillet over medium heat.
- Add the chopped shallots and cook until they become translucent, about 3-4 minutes.
- Add the minced garlic and cook for another 1 minute until fragrant.
- Add the grated zucchini to the skillet and cook for 5-7 minutes, until softened and most of the moisture has evaporated.
- Stir in the chopped spinach and cook until wilted, about 2 minutes.
- Remove the skillet from heat and let the mixture cool slightly.
4. Combine Filling Ingredients:
- In a large bowl, combine the cooked vegetable mixture with the crumbled feta cheese, lemon zest, and fresh thyme.
- Add the beaten egg and breadcrumbs and mix well to combine.
5. Stuff the Cauliflower:
- Place the steamed cauliflower in a baking dish.
