Instructions:

- In a medium bowl, combine the sliced chicken, 1 teaspoon of the soy sauce, and a pinch of salt. Mix well and let marinate for at least 10-15 minutes.
3. Heat the Pan:
- In a large wok or frying pan over medium-high heat, add 2 tablespoons of vegetable oil.
4. Cook the Chicken:
- Add the marinated chicken to the hot pan and stir-fry until cooked through and slightly golden. This should take about 5-7 minutes. Remove the chicken from the pan and set aside.
5. Stir-Fry the Vegetables:
- In the same pan, add the remaining 2 tablespoons of vegetable oil. Add the minced garlic and sliced onions, cooking until fragrant and the onions become translucent.
- Add the sliced red pepper, celery, and carrots. Stir-fry for about 3-4 minutes, until they begin to soften but still retain a bit of crunch.
- Add the Chinese cabbage and regular cabbage to the pan. Stir-fry for another 2-3 minutes until the cabbage starts to soften.

- Return the cooked chicken to the pan with the vegetables.
- Add the vinegar, the remaining soy sauce, and salt. Mix well.
- Pour in the water and bring to a simmer.

- Once the mixture is simmering, add the cornstarch slurry gradually while stirring constantly. The sauce should start to thicken. Continue to cook for another 2-3 minutes until the sauce is well-coated on the chicken and vegetables.
