1. Prepare the Orange:
- Wash the orange thoroughly. Optionally, you can also use organic oranges if you prefer.
- Zest the orange carefully to avoid the bitter white pith.
- Cut the orange in half and juice it. Reserve the juice for the batter and the rest for the syrup.
2. Prepare the Batter:
- In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. You can use a hand mixer or a large mixing spoon.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, sift together the self-raising flour and baking powder.
- Gradually fold the flour mixture into the butter and sugar mixture, alternating with the milk.
- Stir in the orange zest and the juice of 1 orange until well combined.
3. Prepare the Pudding Molds:
- Grease the pudding molds or ramekins lightly with butter or a non-stick spray.
- Divide the batter evenly among the molds or ramekins, filling each about 2/3 full.

4. Steam the Puddings:
- Place a steaming rack or a trivet in the bottom of a large pot. Add enough water to cover the bottom of the pot but not touch the bottom of the molds.
