Tostada Salad is a delightful, nutritious, and easy-to-make dish that combines crispy tortilla, tender chicken, and fresh vegetables. This recipe is perfect for a quick lunch or a light dinner. Ingredients:

Instructions:

1. Prepare the Tortilla:
- Preheat your oven to 375°F (190°C).
- Place the tortilla on a baking sheet and bake for about 5-7 minutes, or until it becomes crispy. Keep an eye on it to prevent burning.
- Once done, remove from the oven and let it cool.
2. Cook the Chicken:
- Season the chicken breast with a dash of salt, 1/4 tsp ground cumin, and 1/4 tsp chili powder.
- Heat a skillet over medium heat and add 1 tsp of olive oil.
- Cook the chicken breast in the skillet for about 5-7 minutes on each side, or until it is fully cooked and no longer pink inside.
- Remove the chicken from the skillet and let it cool slightly before slicing it into thin strips.
3. Prepare the Zucchini:
- While the chicken is cooking, wash and slice the zucchini into thin rounds.
- In another skillet, heat 1 tsp of olive oil over medium heat.
- Add the zucchini slices to the skillet and sauté for about 3-4 minutes on each side, or until they are tender and lightly browned. Season with a pinch of salt if desired.
4. Assemble the Salad:
- Wash and chop the lettuce into bite-sized pieces. Place the chopped lettuce in a large salad bowl.
- Rinse and drain the black beans. Add 1/4 can of black beans to the bowl with the lettuce.

5. Combine and Dress:
- Once the zucchini is cooked, let it cool slightly, then add it to the salad bowl.
- Add the sliced chicken breast to the salad bowl.
- Drizzle 1 tablespoon of lime juice over the salad and gently toss to combine all ingredients.
6. Serve:
- Place the crispy tortilla on a plate and pile the salad mixture on top of the tortilla.
- Garnish with 1 tsp of fresh coriander leaves.
