Instructions:

- Start by washing all the peppers and the onion thoroughly.
- Chop the onion finely.
- Remove the seeds from the red, green, and yellow or green peppers, then chop them into small pieces.
2. Sauté Vegetables:
- In a large pot, melt 2 tablespoons of butter over medium heat.
- Add the chopped onion to the pot. Sauté for about 5-7 minutes until the onion becomes soft and translucent.
- Add the chopped red, green, and yellow or green peppers. Cook for another 5-7 minutes or until the peppers start to soften.
3. Add Broth and Seasoning:
- Pour in the 6 cups of chicken soup or chicken broth.
- Stir in 1 teaspoon of paprika.
- Increase the heat to bring the soup to a boil.
4. Simmer:
- Once the soup reaches a boil, reduce the heat to low.
- Cover the pot and let the soup simmer for about 20-25 minutes, or until all the vegetables are tender and cooked through.
5. Blend the Soup:
- Remove the pot from heat. Allow the soup to cool slightly.
- Use an immersion blender to puree the soup until smooth. Alternatively, you can blend the soup in batches using a regular blender. (Be cautious when blending hot liquids.)
- Return the blended soup to the pot and reheat if necessary.
6. Season to Taste:
- Taste the soup and add salt and pepper if desired, adjusting the seasoning to your preference.
7. Serve:
- Ladle the tri-colour sweet pepper soup into bowls.
