Asian pasta salad

Asian pasta salad combines the delicious, zesty flavors of Asian cuisine with a light, refreshing pasta salad base. Ingredients:

1 cup gluten-free pasta

Instructions:

1. Cook the Pasta:
- Bring a pot of water to a boil. Add a pinch of salt for flavor.
- Add 1 cup of gluten-free pasta and cook according to the package instructions until al dente.
- Drain the pasta and rinse with cold water to stop the cooking process. Set aside.
2. Prepare the Dressing:
- In a small bowl, whisk together 2 tbsp of sugar, 4 tbsp of vegetable oil, 1 tsp of grated or finely minced ginger, and 1 tbsp of soy sauce until the sugar is fully dissolved and the mixture is well combined.
3. Cook the Vegetables:
- If using fresh peas, blanch them in boiling water for about 2-3 minutes until tender, and then transfer to an ice water bath to cool. If using frozen peas, you can skip this step as they’re already cooked.
- Add the ready peas and the 1/2 cup of julienned or thinly sliced carrots to a large mixing bowl.
4. Add the Red Onions:
- Thinly slice 1.5 red onions and add them to the mixing bowl with the peas and carrots.
5. Combine all Ingredients:
- Add the cooked and cooled gluten-free pasta to the large mixing bowl with the vegetables.
- Pour the dressing over the pasta and vegetables.
- Toss everything together until all the ingredients are evenly coated with the dressing.
6. Chill and Serve:
- Cover the mixing bowl with plastic wrap or transfer the salad to an airtight container.
- Refrigerate for at least 1 hour to allow the flavors to meld.
- Serve chilled as a main dish or as a side to your favorite Asian-inspired meals.
