Instructions:

1. Prepare the Quinoa:
- Rinse 1/3 cup of quinoa under cold water.
- In a small saucepan, combine the quinoa and 1 cup of water.
- Bring it to a boil over medium heat, then reduce the heat to low, cover, and simmer for 15 minutes or until the water is fully absorbed.
- Remove from heat and let it sit, covered, for 5 minutes, then fluff with a fork.
2. Prepare the Vegetables:
- Dice 1 onion finely.
- Mince 2 garlic cloves.
- Peel and chop 2 potatoes into small cubes.
- Cut 16 oz of broccoli into florets.
3. Cook the Soup Base:
- In a large pot, heat a little oil over medium heat.
- Add the diced onions and sauté until they become translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the chopped potatoes and broccoli florets to the pot.
4. Add Liquids and Cook:
- Pour 4 cups of chicken gravy into the pot.
- Bring the mixture to a boil, then reduce the heat to a simmer and let it cook for about 15-20 minutes, until the potatoes and broccoli are tender.
