Ingredients:

- Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt to the water.
- Bring the water to a boil over high heat. Once boiling, reduce the heat to medium and let the potatoes simmer until they are tender when pierced with a fork, about 15-20 minutes.
2. Prep the Scallions:
- While the potatoes are cooking, finely chop the scallions. Separate the white and light green parts from the dark green tops.
3. Sauté the Scallions:
- In a small pan over medium heat, melt 1 tablespoon of the butter.
- Add the white and light green parts of the scallions to the melted butter and sauté until they are soft and fragrant, about 2-3 minutes. Set aside.
4. Mash the Potatoes:
- Once the potatoes are cooked, drain them well and return them to the pot.
- Add the remaining 1 tablespoon of butter to the hot potatoes and allow it to melt.
- Using a potato masher or a fork, mash the potatoes until they are smooth and free of lumps.
5. Combine Ingredients:
- Stir the sour cream into the mashed potatoes, mixing thoroughly to ensure it is well incorporated.
- Fold in the sautéed scallions (both the white and light green parts) into the mashed potatoes.
- Season with salt and pepper to taste.
