3. Mash the Potatoes:
- Drain the water from the pot.
- Add the 1/3 cup of milk (3.25% fat), 3 tablespoons of butter, and 2 teaspoons of salt to the potatoes.
- Use a potato masher or an electric mixer to mash the potatoes to your desired consistency. If they seem too thick, you can add a bit more milk until they reach your preferred texture. Set aside and keep warm.
4. Prepare the Roux:
- In a medium saucepan, heat 1 tablespoon of vegetable oil over medium heat.
- Add 1.50 tablespoons of all-purpose flour and cook, stirring constantly, until the mixture turns a golden-brown color. This should take about 2-3 minutes.
5. Add the Liquids:
- Slowly pour in the 1 cup of chicken broth while continuously whisking to prevent lumps from forming.
