Curried chickpea and spinach patties are a delicious and nutritious meal that combines the robust flavors of curry with the health benefits of chickpeas and spinach. Instructions:

1. Sauté the Vegetables:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the finely chopped onion and sauté for about 3-4 minutes, until soft and translucent.
- Stir in the curry paste and cook for an additional minute, allowing the flavors to meld.
2. Cook the Spinach:
- Add the finely chopped spinach to the skillet and cook for 2-3 minutes, or until wilted.
- Remove the skillet from heat and let the mixture cool slightly.
3. Mash the Chickpeas:
- In a large mixing bowl, add the drained and rinsed chickpeas.
- Use a fork or potato masher to mash the chickpeas until they are mostly smooth but still have some texture.
4. Combine Ingredients:
- Add the sautéed onion and spinach mixture to the mashed chickpeas.
- Stir in the beaten egg and bread crumbs until the mixture is well combined.
- Season with salt and pepper to taste.
5. Form the Patties:
- Shape the mixture into patties of your desired size. You should be able to make around 6-8 patties.
6. Cook the Patties:
- Heat the remaining 1 tablespoon of olive oil in the skillet over medium heat.
- Add the patties to the skillet in batches, making sure not to overcrowd the pan.
- Cook for 3-4 minutes on each side, or until golden brown and heated through.
7. Serve:
- Place the freshly cooked patties on a serving plate.
- In a small bowl, mix the Greek yogurt with the finely chopped coriander leaves to create a delightful dipping sauce.
8. Enjoy:
- Serve the patties warm with the coriander yogurt sauce on the side.

- Ensure to drain and rinse the canned chickpeas thoroughly to remove excess sodium and improve the texture of the patties.
