Instructions:

1. Prepare Ingredients:
- Dice the onions.
- Peel and cube the sweet potato.
- Slice the red pepper.
- Chop the tomatoes.
- Mince the garlic.
- Chop the coriander leaves.
- Toast and chop the almonds (if they are not pre-toasted).
2. Cook the Vegetables:
- In a large, heavy-bottomed pot or a traditional tagine, heat the olive oil over medium heat.
- Add the diced onions to the pot and sauté until they are soft and translucent, about 5 minutes.
- Add the sweet potato cubes and red pepper slices to the pot. Cook for another 5-7 minutes until the vegetables start to soften.
3. Add Spices:
- Stir in the black pepper, ground cumin, turmeric powder, and cinnamon. Cook for about 1-2 minutes, stirring constantly, until the spices are fragrant.
4. Add Fish and Tomatoes:
- Add the chunks of white fish to the pot. Gently stir to coat the fish with the spices and vegetables.
- Add the chopped tomatoes and minced garlic. Stir to combine.
5. Simmer:
- Reduce the heat to medium-low. Cover the pot with a lid and let the tagine simmer for about 20-25 minutes, or until the fish is cooked through and the sweet potatoes are tender.
6. Prepare Couscous:
- While the tagine is simmering, prepare the couscous according to the package instructions. Fluff with a fork once cooked.
7. Add Lemon Zest and Coriander:
- Just before serving, stir in the lemon zest and chopped coriander leaves into the tagine, reserving a small amount for garnish.
8. Serve:
- To serve, spoon the couscous onto a large serving platter or individual plates.
- Top with the fish tagine, making sure to include plenty of the flavorful broth and vegetables.
- Sprinkle the toasted and chopped almonds over the top, and garnish with the remaining coriander leaves.
