Armenian-style chicken pilaf rice

Armenian-style chicken pilaf rice is a savory and comforting dish that combines the flavors of tender egg noodles, fluffy white rice, and rich chicken broth. - Once the egg noodles are toasted, add 3 cups (600g) of white rice to the pot. Stir the mixture to combine the rice and noodles well, allowing the rice to get slightly toasted, about 2-3 minutes.
4. Prepare the Broth
- While the rice and noodles are toasting, in a separate kettle or pot, bring 10 cups (2400g) of chicken broth to a boil. Add 4 chicken broth cubes (16g) to the boiling broth and stir until they are fully dissolved.
5. Add the Broth to the Rice
- Carefully pour the hot chicken broth into the pot with the rice and noodles. The mixture might sizzle, so pour slowly to avoid splashing. Stir everything well to combine.
6. Cook the Pilaf
- Bring the mixture to a gentle boil. Once boiling, reduce the heat to low and cover the pot with a lid. Let the pilaf simmer for about 20 minutes, or until the rice is fully cooked and has absorbed all the liquid.
7. Fluff and Serve
- After 20 minutes, check the rice. It should be tender and fully cooked by this point. If there's still liquid remaining, continue to cook for a few more minutes with the lid off. Once done, turn off the heat and let the pilaf sit for 5-10 minutes. Then, fluff the pilaf with a fork to combine the noodles and rice evenly.
