Fruit tea cream

Fruit tea cream is a delightful and unique dessert that blends the rich and creamy texture of whipped cream with the refreshing flavors of fruit and tea. This recipe combines simple ingredients to create a luscious treat that's perfect for any occasion. The following guide will walk you through the steps to ensure you achieve a smooth and flavorful cream every time.

Ingredients:

2 cups heavy whipping cream
460g
1 cup sugar
200g
1 tsp gelatin powder
5g
2 cups sugar
460g
1/3 cup vinegar
72g
1 cup sesame seeds
150g

Instructions:

1. Prepare the Gelatin:
- In a small bowl, sprinkle 1 teaspoon of gelatin powder over 2 tablespoons of cold water. Let it sit for about 5 minutes to bloom.
2. Cook the Sugar Mixture:
- In a medium saucepan, combine 2 cups of sugar and 1/3 cup of vinegar.
- Heat the mixture over medium heat, stirring constantly until the sugar is fully dissolved. Continue to cook until the mixture reaches a light caramel color. Be careful not to burn it.
3. Add Sesame Seeds:
- Once the sugar-vinegar mixture reaches a light caramel color, stir in 1 cup of sesame seeds. Mix well to ensure the seeds are evenly coated. Remove the saucepan from heat and set aside.
4. Prepare the Cream Mixture:
- In a separate saucepan, pour 2 cups of heavy whipping cream and add 1 cup of sugar.
- Heat the cream mixture over medium heat, stirring frequently until the sugar is completely dissolved and the mixture is heated through (do not let it boil).
5. Incorporate Gelatin:
- Remove the cream mixture from the heat, and immediately stir in the bloomed gelatin until fully dissolved.
6. Combine the Mixtures:
- Carefully combine the cream mixture with the sesame seed caramel mixture, stirring until well blended.
7. Chill the Mixture:
- Pour the combined mixture into a heatproof dish or individual serving containers.
- Allow the mixture to cool to room temperature, then cover and refrigerate for at least 4 hours or until set.
8. Serve:
- Once fully chilled and set, your Fruit Tea Cream is ready to serve.
- Optionally, garnish with fresh fruit or a drizzle of honey before serving.

Tips:

- Ensure all your ingredients are at room temperature before you begin to ensure a smooth mixture.

- For a stronger tea flavor, consider steeping the tea in the cream for longer before you start the recipe.

- When adding the gelatin, sprinkle it over the cream slowly and whisk continuously to prevent clumping.

- Feel free to adjust the sugar levels to your taste or substitute with a sweetener of your choice.

- Experiment with different types of fruit teas to find your favorite flavor combination.

- Allow the cream mixture to cool gradually before refrigerating to prevent the sesame seeds from sinking to the bottom.

By following these easy steps, you’ll have a delicious fruit tea cream that’s sure to impress your guests or satisfy your own sweet tooth. The combination of the creamy texture and the subtle hints of tea and fruit makes for a wonderfully refreshing dessert. Enjoy your homemade fruit tea cream as a standalone treat or as a complement to your favorite pastries.
