Ingredients:

1/2 cup whole-wheat pasta

Instructions:

1. Cook the Pasta:
- Bring a medium pot of salted water to a boil.
- Add the whole-wheat pasta and cook according to the package instructions until al dente (usually about 8-10 minutes).
- Drain the pasta and rinse it under cold water to stop the cooking process. Set aside to cool.
2. Prepare the Chicken:
- While the pasta is cooking, heat 1 tbsp of olive oil in a skillet over medium heat.
- Season the chicken breast with salt and pepper (optional).
- Cook the chicken breast in the skillet for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink in the center.
- Remove the chicken from the skillet, let it cool slightly, and then cut it into bite-sized pieces.
3. Chop the Vegetables:
- Cut the green pepper into small, bite-sized pieces.
- Chop the olives into slices or leave them whole, based on preference.
- If using whole carrots, peel and shred or chop them into small pieces.
4. Combine Ingredients:
- In a large mixing bowl, combine the cooked and cooled pasta, chicken pieces, green pepper, olives, carrots, and mozzarella cheese.

5. Dress the Salad:
- Pour 2 tbsp of Italian salad dressing over the mixture.
- Toss everything together until all ingredients are well-coated with the dressing.
6. Chill and Serve:
- For best results, cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
