Instructions:

1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper or a silicone baking mat.
2. Prepare the Mixture:
- In a medium-sized mixing bowl, lightly beat the egg whites until frothy but not stiff.
- Fold the grated parmesan cheese and flour into the egg whites. Mix until well combined.
3. Shape the Tuiles:
- Place small spoonfuls (about 1 tablespoon each) of the cheese mixture onto the prepared baking sheet.
- Use the back of a spoon to spread each spoonful into a thin, even circle, approximately 3 inches in diameter.
- Leave some space between each circle as the mixture will spread a bit during baking.
4. Bake the Tuiles:
- Place the baking sheet in the preheated oven.
- Bake for about 5-7 minutes, or until the tuiles are golden brown and crisp around the edges.
5. Shape the Tuiles (Optional):
- If you want to shape the tuiles (for example, into a curved shape), carefully remove them from the baking sheet immediately after baking while they are still warm and flexible.
- Drape them over a rolling pin or another curved surface and let them cool and harden in that shape. If you prefer flat tuiles, simply let them cool on the baking sheet.
6. Cool and Store:
- Allow the tuiles to cool completely on a wire rack.
- Once cooled, they can be stored in an airtight container at room temperature for up to 3 days.

Tips:

- For best results, grate the Parmesan cheese yourself rather than using pre-grated cheese. Freshly grated cheese melts and spreads more evenly.

- Make sure the egg whites are at room temperature before you begin. This helps them to incorporate better with the other ingredients.
