4. Mix the Yolks and Sugar: In a large mixing bowl, add 1 egg yolk (16g) and 1/3 cup (63g) sugar. Using a hand mixer or a stand mixer, beat the mixture until it becomes pale and creamy. Add 1 tsp (4g) vanilla extract and the cooled melted butter. Mix until well combined.
