Instructions:

1. Prepare the Herb-Chili Paste:
- In a food processor or mortar and pestle, combine 1 garlic clove, 1 tsp coriander leaves, 1/2 cup spearmint, and 1/2 cup fresh parsley.
- Deseed the 2 jalapeno peppers and add them to the mix.
- Squeeze the juice from 1 lemon and add to the mixture.
- Add 1/2 tsp ground cumin, 1/2 tsp fennel seeds, and 1/2 tsp salt.
- Gradually pour in 1/2 cup olive oil while blending to form a smooth paste. Set aside.
2. Prepare the Fennel:
- Trim the stalks and fronds from the 1 bulb fennel. Reserve some fronds for garnish if desired.
- Thinly slice the fennel bulb using a mandoline or a sharp knife.
3. Prepare the Avocado:
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
- Mash the avocado with a fork until smooth.
4. Toast the Bread:
- Toast 4 slices of white bread to your desired level of crispiness.
5. Assemble the Sandwich:
- Spread a generous amount of the mashed avocado onto each slice of the toasted bread.
- On two of the slices, layer the thinly sliced fennel.
- Add a leaf of lettuce to each of these slices.
- Spread the prepared herb-chili paste over the lettuce.
- Top with the remaining slices of bread to complete the sandwiches.
6. Serve:
- Optionally, garnish with reserved fennel fronds.
- Cut the sandwiches in half if desired and serve immediately.
