Ingredients:

Instructions:

1. Prepare the Steaming Setup:
- Grease a pudding basin or a suitable heatproof bowl with butter. Sprinkle 1 tablespoon of bread crumbs evenly inside the basin to coat the greased surface, ensuring that the entire interior is covered. This will help the pudding to release easily after steaming.

2. Make the Lemon Pudding Batter:
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Grate the zest of the lemons and juice them. Add both the lemon zest and juice to the creamed butter and sugar mixture, mixing well to combine.
- Beat the eggs in a separate bowl and then gradually add them to the lemon mixture, beating well between each addition.

3. Combine Dry Ingredients:
- In another bowl, sift the self-raising flour and baking powder together. This will ensure there are no lumps and the ingredients are evenly distributed.

4. Mix Wet and Dry Ingredients:
- Gradually fold the flour mixture into the wet lemon mixture, alternating with adding the milk. Fold until all ingredients are well combined, creating a smooth batter.

5. Transfer to Pudding Basin:
- Pour the batter into the prepared pudding basin. Cover the top of the basin with a piece of baking parchment or greased foil, pleating it in the middle to allow room for expansion. Secure it with kitchen string or a rubber band.
6. Steam the Pudding:
- Place a trivet, inverted saucer, or steaming rack at the bottom of a large saucepan. Fill the saucepan with boiling water until it reaches halfway up the sides of the pudding basin.
- Carefully lower the covered pudding basin into the saucepan.
- Place the lid on the saucepan and steam the pudding over a gentle simmer for about 2 hours. Check periodically to ensure the water level stays consistent, adding more boiling water if necessary.

7. Check and Serve:
- After 2 hours, carefully lift the pudding basin from the saucepan. Remove the parchment or foil cover. Insert a skewer or knife into the center of the pudding; if it comes out clean or with a few crumbs clinging to it, the pudding is done.
- Let the pudding cool for a few minutes before turning it out onto a serving plate.

8. Serve:
