Instructions:

1. Prepare the Brown Rice:
- Begin by cooking the brown rice according to the package instructions. Typically, you will need to rinse the rice under cold water, then combine it with water in a saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for about 45 minutes, or until the rice is tender and the water is absorbed.
- Once cooked, let the rice cool to room temperature.
2. Prepare the Vegetables:
- While the rice is cooking, cut the avocado into thin strips.
- Slice the red pepper and green pepper into thin, matchstick-sized strips.
3. Prepare the Cucumbers:
- Cut off the ends of each cucumber. Using a vegetable peeler or mandoline, carefully slice the cucumbers lengthwise into thin ribbons. These will form the outer "wrap" of your sushi rolls.
4. Make the Filling:
- In a small bowl, mix the mayonnaise salad dressing with the chili sauce. Adjust to taste if you prefer spicier or milder filling.
5. Assemble the Sushi Rolls:
- Lay out a cucumber ribbon on a flat surface. Pat it dry with a paper towel if it’s very wet.
