Instructions:

1. Preheat Your Oven:
Preheat your oven to 350°F (175°C), ensuring it’s nice and hot before you start baking.
2. Prepare the Skillet:
Grease a 10-inch cast-iron skillet with butter or non-stick cooking spray. Set it aside.
3. Cream the Butter and Sugar:
In a large mixing bowl, combine 1 cup (220g) of softened butter and 1 cup (230g) of packed brown sugar. Use an electric mixer on medium speed to cream them together until the mixture is light and fluffy.
4. Add the Wet Ingredients:
Beat in 1 egg (50g) and 2 tsp (8g) of vanilla extract into the butter-sugar mixture until well combined.
5. Mix the Dry Ingredients:
In a separate bowl, whisk together 1.5 cups (190g) of all-purpose white wheat flour, 2 tbsp (30g) of dry cocoa powder, and 1 tsp (5g) of baking soda. Mix until these dry ingredients are well incorporated.
6. Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet mixture, beating on low speed until fully combined. Scrape down the sides of the bowl as needed to ensure even mixing.
7. Add the Coconut:
Stir in 1/3 cup (50g) of dried coconut meat until evenly distributed throughout the dough.
8. Spread the Dough in the Skillet:
Transfer the cookie dough into the prepared cast-iron skillet. Use a spatula to spread it evenly.
9. Bake to Perfection:
Place the skillet in the preheated oven and bake for 25-30 minutes, or until the cookie is golden brown and a toothpick inserted into the center comes out clean. Keep an eye on the cookie after the 25-minute mark to avoid over-baking.
