Instructions:

1. Preparation:
- Preheat your oven to 350°F (175°C).
- Grease and line three 8-inch round cake pans with parchment paper.
2. Melt and Mix Dry Ingredients:
- In a large saucepan over low heat, melt the butter. Remove from heat once fully melted.
- Add the dry cocoa powder and baking soda to the melted butter, mixing until fully combined. Allow to cool slightly.
3. Combine Wet Ingredients:
- In a separate bowl, whisk the eggs and vanilla extract together.
- Once the butter and cocoa mixture has cooled slightly, whisk in the milk and the egg-vanilla mixture until smooth.
4. Mix in Flours:
- Sift together the self-raising flour and all-purpose white wheat flour.
- Gradually add the sifted flours to the cocoa mix, stirring until just combined. Do not overmix.
5. Bake the Cakes:
- Divide the batter evenly among the three prepared cake pans.

- Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
6. Prepare Dark Chocolate Ganache:
- Place dark chocolate and heavy whipping cream in a heatproof bowl.

- Allow to cool slightly before using.
7. Prepare White Chocolate Ganache:
- Repeat the same process as with the dark chocolate ganache for the white chocolate.
8. Prepare Frosting:
- In a medium bowl, beat the powdered sugar and about 2 tbsp of the dark chocolate ganache (for added flavor and color) until smooth and creamy. Adjust consistency if needed.
