Instructions:

1. Preheat and Prepare:
- Preheat your oven to 375°F (190°C).
- Grease a large baking dish with a small amount of butter or cooking spray.
2. Cook the Potatoes:
- Peel and chop the potatoes into evenly sized pieces.
- Place them in a pot of salted boiling water and cook until tender, about 15-20 minutes.
- Drain the potatoes and mash them with half (1/4 cup or 55g) of the butter until smooth. Set aside.
3. Prepare the Fish:
- In a large saucepan, pour the milk and bring it to a gentle simmer.
- Add the white fish and salmon to the simmering milk. Poach gently for about 5-7 minutes until the fish is just cooked but still firm.
- Remove the fish from the saucepan with a slotted spoon and set aside. Reserve the poaching milk for the sauce.
4. Make the Sauce:
- In the same saucepan, melt the remaining 1/4 cup (55g) butter over medium heat.
- Stir in the flour and cook, constantly stirring, for 1-2 minutes to make a roux.
- Gradually whisk in the reserved poaching milk, ensuring there are no lumps. Bring to a gentle boil, stirring continuously until the sauce thickens.
- Stir in the lemon juice and chopped parsley. Add salt and pepper to taste.
- Flake the poached fish into bite-sized pieces and gently fold into the sauce. Mix in the peas.
5. Prepare the Eggs:
- While the sauce is cooking, place eggs in a saucepan, cover with water, and bring to a boil.
- Once boiling, reduce heat and let simmer for 9-10 minutes.
- Drain and cool the eggs under cold running water, then peel and chop.
6. Assemble the Fish Pie:
- Pour the fish and sauce mixture into the prepared baking dish.
- Distribute the chopped eggs evenly on top of the mixture.
- Spoon the mashed potatoes over the top, spreading it out evenly to cover the fish mixture completely.
- Sprinkle the grated cheddar cheese over the mashed potatoes.
7. Bake:
- Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and the pie is bubbling around the edges.
8. Serve:
- Remove from the oven and let it sit for a few minutes before serving.
