Meatball skewers

Meatball skewers are a delightful and versatile dish that can serve as an appetizer or a main course. Combining savory meatballs flavored with cheese, garlic, and fresh chives, these skewers are perfect for any occasion. Their ease of preparation and delicious taste make them a favorite among both kids and adults.

Ingredients:

18 oz ground beef (80/20%)
510g
2 garlic cloves
6g
1/4 cup grated parmesan cheese
20g
1/3 cup bread crumbs
30g
1 egg
50g
2 tbsp chives
30g
2 tsp olive oil
9g
2 cups lettuce
150g
1/2 cup cherry tomatoes
90g
1/2 cup cheddar cheese
80g
1 carrot
60g

Instructions:

1. Preheat Oven and Prepare Skewers:
Preheat your oven to 375°F (190°C). If using wooden skewers, soak them in water for about 15-20 minutes to prevent burning.
2. Prepare Meatball Mixture:
In a large mixing bowl, combine the ground beef, minced garlic, grated parmesan cheese, bread crumbs, egg, and chopped chives. Mix well until all ingredients are thoroughly incorporated.
3. Form Meatballs:
Using your hands, shape the meat mixture into small meatballs, approximately 1 inch in diameter. You should end up with around 18-20 meatballs, depending on the size.
4. Assemble Skewers:
Thread the meatballs onto the skewers, alternating with cheddar cheese cubes and cherry tomato halves. Each skewer should have about 3-4 meatballs, with cheese and tomatoes interspersed between them.
5. Cook Meatball Skewers:
Place the assembled skewers on a baking sheet, lined with parchment paper or aluminum foil. Drizzle the olive oil over the skewers to keep the meatballs moist and add a nice flavor. Bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through and the cheese is melted.
6. Prepare Salad:
While the meatball skewers are baking, rinse and chop the lettuce and julienne or thinly slice the carrot. Toss the lettuce and carrot together in a serving bowl.
7. Serve:
Remove the meatball skewers from the oven and let them cool slightly. Serve the skewers over the bed of lettuce and carrots. Enjoy your meal with an additional side of cherry tomatoes if desired.

Tips:

- Make sure to use 80/20 ground beef to maintain the right balance of fat and meat, ensuring juicy and flavorful meatballs.

- Finely mince the garlic for even distribution throughout the meat mixture and better flavor integration.

- If the mixture feels too wet or sticky, add a bit more bread crumbs until you reach the desired consistency.

- Let the meatball mixture rest for a few minutes before shaping it to allow the flavors to meld together.

- Use a small ice cream scoop to portion out the meatballs evenly, ensuring they cook at the same rate.

- Soak your skewers in water for 30 minutes before using them to prevent burning during grilling or baking.

- Cook the skewers on medium heat to ensure the meatballs are cooked through without burning the exterior.

- Serve with a dipping sauce, like marinara or a yogurt-based sauce, to complement the flavors of the meatballs.

Meatball skewers offer a tasty and fun way to enjoy a classic dish with a twist. By following these steps, you can create a flavorful and satisfying meal that is sure to impress your family and friends. Enjoy these skewers on their own or pair them with a fresh salad for a complete and balanced meal.
